I originally discovered this company when a histamine-intolerant consulting client told me she used their meat because it was frozen in such a fresh state that it had far less histamine than any other meat she could get her hands on. This freshness is a result of them being one of the only farms in the United States that does all of their slaughtering directly on the farm. Quite often people who eat a whole-foods diet that is low in starches and cheese do not realize that they've eliminated the vast majority of salt in their diet.
