I originally discovered this company when a histamine-intolerant consulting client told me she used their meat because it was frozen in such a fresh state that it had far less histamine than any other meat she could get her hands on. This freshness is a result of them being one of the only farms in the United States that does all of their slaughtering directly on the farm. The folks at White Oak are leaders in regenerative agriculture. They operate a zero-waste slaughtering system where all blood, bones, and guts that are not sold for purchase are turned into fertilizer, and where all water waste is converted into clean irrigation for the crops. They estimate that for every pound of beef produced, they store 3.5 pounds more carbon in the soil than they release as gas, which is an amazingly clean carbon footprint. I personally use their "paleo ground beef" (beef, liver, heart, kidney, and thymus, all ground together) cooked heavily in taco seasoning as my favorite way to consume organ meats.
