I believe this knowledge is well worth taking in now, 15 years later, though I would add several updates:
The discussion of millet should be tempered with the fact that many processed foods that use so-called “millet” as an ingredient are using proso millet, to which this discussion does not apply. For more details, see Why It Matters What Type of Millet You Eat.
